RANGER NICK'S BRANDY MANGO CHILLI PRAWNS

Ingredients

12 good size green prawns (shelled) and butterflied

1 large mango – cut into chunks

100ml cream

30-60mls brandy depending how strong you want it

2 shallots chopped

1 medium chilli diced (more if you like it hot and spicy)

1 knob butter

Method

Butterfly and clean prawns ready – set aside.

Dice your mango, finely cut shallots and chilli.

Heat butter until melted in hot pan

Add shallots and chilli – cook till your colours pop

Add prawns – when cooked (be careful not to over cook your prawns)

Add your brandy – flambe

Add mango and cream, heat through and enjoy!
