Hilton Hawaiian Village Tropics Bar and Grill Poke Two Ways by Chef Joe Derla

Big Eye Tuna Poke

1-Pound Fresh Cubed Big Eye Tuna

1-Teaspoon Hawaiian Salt or Sea Salt

2-Tablespoon Dice Sweet onion

2-Tablespoon Green Onion

1-Tablespoon Inamona (Roasted Kukui Nut) or Minced roasted Macadamia Nut, or Peanut

1/3- Cup Roughly Chopped Ogo (Seaweed)

1-Tablespoon Sesame Oil

2-Tablespoon Soy Sauce

1-Teaspoon Chili Flakes

Method:

On a chilled mixing bowl, add tuna and the rest of the ingredients and tossed gently with a spoon (Do not over mix).

Enjoy.

 

Big Eye Tuna Spicy Poke

1-Pound Fresh Cubed Big Eye Tuna

1-Teaspoon Hawaiian Salt or Sea Salt

2-Tablespoon Dice Sweet onion

2-Tablespoon Green Onion

1-Tablespoon Sesame Oil

2-Tobiko or Masago (Fish Egg)

1-Teaspoon Chili Flakes

2-Tablespoon Sriracha Chili Sauce

2 ½- Tablespoon Mayo

Method:

On a chilled mixing bowl, add tuna and the rest of the ingredients and tossed gently with a spoon (Do not over mix). Enjoy
